Ingredients

  • 1 lb fresh strawberries hulled (leave whole)
  • 1 Carolina Reaper Pepper stems removed - keep seeds for max heat
  • 1 cup granulated sugar
  • 1/4 cup apple cider vinegar
  • 1 Tbsp fresh lemon juice
  • 1/2 tsp kosher salt

Instructions

  • Wear gloves AND a mask.
  • Hull strawberries (leave whole).
  • Dump strawberries into the Instant Pot.
  • Add sugar, vinegar, lemon juice, and salt.
  • Fresh Reapers: add whole (stems removed)
  • Powder Reapers: sprinkle in ¼–¾ tsp
  • Stir once. Secure lid → valve to Sealing.
  • Pressure Cook High → 1 minute.
  • Natural Release 15 min → STEP FAR BACK, mask on → Quick Release.
  • Remove lid (away from face). Use immersion blender to purée smooth.
  • Sauté Normal → cook 8–12 min, stirring constantly, until thick (coats spoon).
  • Taste with a toothpick. Add more sugar or Reaper powder if needed.
  • Jar hot → water-bath can 10 min or fridge 3 weeks.

Notes

Crazy Bird Lady uses fresh Reapers grown in her garden— that’s the gold standard. Reaper powder works great and is available year-round (start with ¼ tsp — it’s more concentrated). Adjust heat by adding more or less Carolina Reaper. For a milder version, substitute a habanero or jalepeno.
