Strawberry Reaper Glaze

Ingredients
- 1 lb fresh strawberries hulled (leave whole)
- 1 Carolina Reaper Pepper stems removed – keep seeds for max heat
- 1 cup granulated sugar
- 1/4 cup apple cider vinegar
- 1 Tbsp fresh lemon juice
- 1/2 tsp kosher salt
Instructions
- Wear gloves AND a mask.
- Hull strawberries (leave whole).
- Dump strawberries into the Instant Pot.
- Add sugar, vinegar, lemon juice, and salt.
- Fresh Reapers: add whole (stems removed)
- Powder Reapers: sprinkle in ¼–¾ tsp
- Stir once. Secure lid → valve to Sealing.
- Pressure Cook High → 1 minute.
- Natural Release 15 min → STEP FAR BACK, mask on → Quick Release.
- Remove lid (away from face). Use immersion blender to purée smooth.
- Sauté Normal → cook 8–12 min, stirring constantly, until thick (coats spoon).
- Taste with a toothpick. Add more sugar or Reaper powder if needed.
- Jar hot → water-bath can 10 min or fridge 3 weeks.
Notes
Crazy Bird Lady uses fresh Reapers grown in her garden— that’s the gold standard. Reaper powder works great and is available year-round (start with ¼ tsp — it’s more concentrated). Adjust heat by adding more or less Carolina Reaper. For a milder version, substitute a habanero or jalepeno.
